Chicken Divan

Ingredients:

1 lb. boneless chicken or Turkey, preferably breasts, cooked and cut into bite sized pieces
1 head broccoli cut into small pieces
1 bunch asparagus, with the ends broken off, cut into pieces
1 bunch or bag spinach, chopped
2 cans cream of mushroom soup
1 cup mayonnaise
1 cup sour cream or yogurt
Juice of ½ lemon
1 tsp curry powder
½ cup white wine
½ cup parmesan cheese
1 cup grated cheddar cheese
1 cup bread crumbs
4 tbsp melted butter
Wild’erb Seasoning

Lightly steam the vegetables. Mix the veggies with the chicken in a bowl. In a small bowl combine the soup, mayo, yogurt or sour cream, parmesan, cheddar, lemon juice, curry powder, wine and Wild’erb Seasoning. Mix thoroughly. Pour over chicken and veggies. Mix so that everything is evenly coated. Pour into a casserole dish. Combine bread crumbs and butter and sprinkle evenly over the top. Bake uncovered at 350 degrees for 1 hour.
