Quesadillas
Diced chicken breast or lean ground beef
4 tbsp fat (olive oil, sesame oil, coconut oil, butter)
1 small onion, diced
1 small cubanelle pepper, diced
1 jalapeno, diced
5 green onions, sliced
3 cloves fresh garlic, minced
Handful fresh wild herbs and/or fresh cilantro, minced
Wild’erb Seasoning
1 package taco seasoning
1 package medium sized flour tortillas
Oil for cooking tortillas
Mexican cheese blend, grated (or any favorite cheese)
Sour cream or yogurt
Salsa
Cook chicken or ground beef in fat till browned. Add onion and peppers. Cook until vegetables are softened. Add green onions, garlic, wild herbs and cilantro and cook a few more minutes. Add Wild’erb Seasoningand taco seasoning to taste. Mix well and cook till flavors and blended. Set aside and keep warm.
In a large fry pan heat oil on medium heat. Add one tortilla. Spoon filling onto half of the tortilla. Top the filling with cheese. Fold tortilla over to cover the filling and cheese. Press down with spatula. Flip over and brown other side. Remove to a baking sheet and place in a preheated oven at 250 degrees to keep warm. Repeat until the filling is used up. Serve with sour cream and salsa.
