Yamkins
2 large yams
2 tbsp butter
2-3 tbsp plain yogurt
2 tbsp brown sugar
2 tbsp Wild’erb Seasoning
Peel yams and slice into one inch slices. Steam until soft. Mash in a bowl. Add butter, yogurt, Wild’erb Seasoning, salt and pepper to taste. Blend well adjusting the seasoning. Scrape mixture into ramkins or small individual-serving baking dishes. Sprinkle with brown sugar. Bake 30 minutes at 350 degrees. Broil another 5 minutes to lightly brown the top.
