Breakfast Scramble

1 potato, diced Saute potatoes in fat until they are starting to turn golden. Add onion and pepper and sauté until softened. Add mushrooms, garlic, ham and herbs and cook for several minutes until ham is hot and mushrooms are getting soft. Season with Wild’erb Seasoning to taste. Add the beaten eggs over top, mix until the eggs are setting. Sprinkle on a layer of grated cheese, turn off the heat and cover the pan. While cheese is melting toast your bread, butter it and sprinkle with Wild’erb Seasoning. Any cooked meats can be substituted for the ham. This is a great way to use up leftover beef and chicken. Or you can fry up some bacon or sausage if you like. |
